Yesterday was a good day!

I probably need to back up to make it all make sense.

Saturday, Krl decided on tacos for supper. I decided to whip up some homemade beef and bean burritos too! I use a store bought taco seasoning mix, but Krl likes to use corn tortillas and flash fry them. My burritos consisted of refried beans, some diced green chili's, part of a can of green chili enchilada sauce, and a touch of cumin. I seasoned and browned a package of ground beef before I split it up for the respective dishes. I added the taco seasoning to one pan and I combined the remaining meat with the bean and chilis mixture. I began flash frying the corn tortillas and placing them on a plate with paper towels, turning them to get rid of excess cooking oil, then I would fold them in half for tacos. While this was going on I micro-ed flour tortillas for the burritos. Krl had cut up lettuce and tomato and we used mexican four cheese. It was good, and it was a cheap meal.

Best part was, we had left overs! I just threw it all together, taco meat and burrito filling into one container.

Sunday morning Krl was in the mood for breakfast so I became innovative. We both love huevos rancheros. So, I invented a huevos ranchero omeleto! I did the omelet thing and used some of the left over meat mixture from the night before as filling along with some grated cheese. My first inclination was to pour green chili enchilada sauce over the finished omelet, but I decided to just serve picante on the side. I micro-ed flour tortillas to finish the meal. Krl told me I need to put this recipe in my cookbook! It was goood! Mucho bueno!

The highlight of the day came when Kali called saying that she and Scott were coming to Abilene to pickup Addie and they wanted to come by so we could see Addie. Kali and Scott stopped by early and called to make arrangements for picking Addie up. Addie's Dad is so spazzoid, he doesn't want Kali to pick up Addie from his house. The rendezvous was set up for Target and Kali prepared to leave. I asked her if she wanted Scott or I to go with her so Garry would behave. She asked me to go, and explained that it really upsets Garry when Scott is with her. Garry was not happy I was there but he was on his best behavior.

Addie was thrilled to see her Dandy! And vice versa. She has really grown up and slimmed down since Christmas! Of course she immediately wanted to know if she could get a snack. I asked what and she said a burrito and a taco from Taco Bell. Guess what? I told her when I got home I would fix her up! She kind of thinks her Dandy is pretty neat because I whipped it up in no time (from my left overs) and Kali and Scott were surprised because she ate it all! Later in the visit I fixed Addie and Meme coke floats as a treat!

Addie was tickled to see Meme. She was scared she would hurt Meme's leg. One thing all the grandbabies have had to do was grab a sharpie and sign Meme's cast. We talked with Kali about possibly having Addie one night of her spring break so she and Kat could get together for a sleep over at Meme's!

Before they left Addie asked me if she could call Kat. When it was all said and done she had taken the phone out to the patio and was doing that girl thing, jabbering on the phone! They are so funny! Eight years olds talking girl "bizness". Their phone call lasted about a half hour!

It was good to see them!

Lately I have become enamored with the wild squirrels in our neighborhood. Lots of people don't like them but Krl started filling her bird feeders last year and along with the birds came the squirrels. Eventually she began filling some feeders with "critter mix". It is not unusual to see them on our patio. The other day I saw one squirrel in our front yard. It ran to one tree and up it went, got on a limb and ran to the very end. The limb bent with the squirrel's weight and swayed back and forth. Timing his actions, the squirrel leapt from our tree to the neighbor's tree, ran to the tree trunk, changed limbs and ran to the very tip before leaping from the tree to the neighbor's rooftop. Across the crest it ran. I went through the house and looked outside just in time to see the squirrel hop from a tree in the neighbor's backyard to the fence and away it went!

In the past couple of weeks I have had opportunity to witness this repeatedly and it amazes me every time. I expect that every time the squirrel leaps for the small branch, it will snap and the squirrel will crash to the ground. I wonder how many times the squirrel failed before he perfected this trick.

I think of the tremendous faith the squirrel had to have when he first leapt. Faith that he could make the jump, faith that the tree limb would support him (or her), and faith that he could hold on when he got there.
